
Marli Russell Fumé Blanc
Overview
The vines which bare the fruit for this wine were planted in 2008, on a southerly facing slope. As per traditional methods, our Fumé blanc is 100% barrel fermented Sauvignon blanc. The winemaking methodology follows on from other Mount Mary white wines, where the fruit is pressed relatively hard to give the wine a phenolic texture. Fermentation is conducted with a high solids component for added complexity, while a higher fermentation temperature (than would be considered typical for Sauvignon blanc) is encouraged, to give the wine less overt primary fruit and more secondary complexity.
